This sweet wine is made when there is an exceptionally sunny autumn. A small parcel of grapes are left to mature on the vine and dried grapes are carefully selected by hand. Bright straw yellow in colour with hints of green. Intense aromas of pear, grapefruit, peach and honey on the nose. Acidity and sweetness are perfectly balanced on the creamy and concentrated palate. The finish is long and aromatic, with a subtle minerality. Perfect for pairing with sweet desserts and blue cheeses such as Gorgonzola and Cabrales.

Astobiza Estate are boutique producers of Txakoli. The small-scale winery is based in Okondo in the Álava province, just 12 miles to the south west of Bilbao, and owns 10 hectares of vineyards. The focus of the estate is on the indigenous Ondarrabi Zuri grape, with smaller plantings of Ondarrabi Zuri Zerriatie (Petit Courbu) and Izkirota (Gros Manseng). The grapes, which are planted at low densities at 300 metres above sea level, are all handpicked.
